Spinach Recall & E. Coli Food Poisoning: What is E. Coli?

Escherichia coli usually abbreviated to E. coli, is one of the main species of bacteria that live in the lower intestines of mammals. Though they are necessary for the proper digestion of food and are part of the intestinal flora, they can cause food poisoning when ingested. Severity of the illness can vary considerably but can be fatal, particularly to young children, the elderly, or the immunocompromised.
Symptoms of E. Coli Poisoning
Symptoms of E. coli poisoning include diarrhea, often with bloody stools. While most healthy adults can completely recover within a week, some people can develop a form of kidney failure called Hemolytic Uremic Syndrome (HUS). HUS is most likely to occur in young children and the elderly. The condition can lead to serious kidney damage and even death.

If you show symptoms of E. coli poisoning, please seek immediate medical attention from your healthcare provider and report your concerns to the CDC. Depending upon the specific strain, E. coli poisoning may be treated with certain types of antibiotics.
